Beef burgers with yoghurt salsa

Ingredients
  

  • 1/2 red onion finely chopped
  • 1/2 continental cucumber finely chopped
  • 1 vine-ripened tomato finely chopped
  • 1/2 cup 140g Greek-Style Yoghurt
  • 1 lime rind finely grated, juiced
  • 500 g Classic Beef Burgers
  • 4 Turkish Rolls split
  • 4 baby cos leaves

Instructions
 

  • Step 1
  • Combine onion, cucumber, tomato, yoghurt, lime rind and lime juice in a small bowl. Season.
  • Step 2
  • Heat a barbecue flatplate or chargrill on high. Gently shape each beef burger into a 19cm-long oval. Cook the burgers on the grill for 3 mins each side or until charred and cooked through. Transfer to a plate and cover with foil to keep warm.
  • Step 3
  • Cook the rolls, cut-sides down, on the grill for 2-3 mins or until toasted.
  • Step 4
  • Divide the roll bases among serving plates. Top with lettuce and burgers and spoon over the yoghurt salsa. Top with roll tops to serve.

Notes

Recipe tip

Use it up: If you’re using a 1kg tub Greek Style Yoghurt, you’ll have some yoghurt left over after using it in this week’s meal plan. Use it in smoothies.
